By Sanjeev Kapoor 14 Aug 2019 in Recipes Course New Update Main Ingredients Chicken, Salt Cuisine Parsi Course Main Course Chicken Prep Time 1.30-2 hour Cook time 26-30 minutes Serve 4 Taste Mild Level of Cooking Moderate Others Non Veg Advertisment Ingredients list for Dilkhush Marghi 1 kilogram Chicken medium sized pieces to taste Salt 1 tablespoon Ginger-garlic paste 1 cup Yogurt a few Saffron (kesar) 2 Green cardamoms 1 inch stick Cinnamon 4 Cloves 5 Black peppercorns 2 blade Mace 1/2 Nutmeg grated 1 Star anise 1/2 tablespoon Fennel seeds (saunf) 1/2 tablespoon Coriander seeds 2 tablespoons Ghee 1 large Onion caramalized 2 Bay leaves 1 teaspoon Turmeric powder 2 cup Fresh tomato puree 1 teaspoon Red chilli powder 1 cup Green peas boiled 1/4 cup Fresh coriander leaves chopped Method Advertisment Marinate the chicken pieces in salt, ginger garlic paste and yogurt and set aside for one hour. Soak saffron in one cup of water. Grind green cardamoms, cinnamon, cloves, peppercorns, mace, nutmeg, star anise, fennel seeds and coriander seeds to a fine paste along with a little water. Heat ghee in a pan Add onion and sauté till brown. Add bay leaves and chicken. Sauté for five minutes and lower the heat. Add ground masala, turmeric powder, tomato puree and red chilli powder. Adjust seasoning. Cover and cook till chicken is done. Mix in saffron. Remove chicken into a serving dish and serve garnished with green peas and coriander leaves.
