Be a kid or a teenage or an adult or an oldie, chicken lovers trend all over the world at all times! One meat that is a favourite of all beyond belief! When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Dilkhush Marghi Recipe

  • Chicken medium sized pieces 1 kilogram

  • Salt to taste

  • Ginger-garlic paste 1 tablespoon

  • Yogurt 1 cup

  • Saffron (kesar) a few

  • Green cardamoms 2

  • Cinnamon 1 inch stick

  • Cloves 4

  • Black peppercorns 5

  • Mace 2 blade

  • Nutmeg grated 1/2

  • Star anise 1

  • Fennel seeds (saunf) 1/2 tablespoon

  • Coriander seeds 1/2 tablespoon

  • Ghee 2 tablespoons

  • Onion caramalized 1 large

  • Bay leaves 2

  • Turmeric powder 1 teaspoon

  • Fresh tomato puree 2 cup

  • Red chilli powder 1 teaspoon

  • Green peas boiled 1 cup

  • Fresh coriander leaves chopped 1/4 cup

Method

Step 1

Marinate the chicken pieces in salt, ginger garlic paste and yogurt and set aside for one hour. Soak saffron in one cup of water. Grind green cardamoms, cinnamon, cloves, peppercorns, mace, nutmeg, star anise, fennel seeds and coriander seeds to a fine paste along with a little water.

Step 2

Heat ghee in a pan Add onion and sauté till brown. Add bay leaves and chicken. Sauté for five minutes and lower the heat. Add ground masala, turmeric powder, tomato puree and red chilli powder. Adjust seasoning. Cover and cook till chicken is done. Mix in saffron.

Step 3

Remove chicken into a serving dish and serve garnished with green peas and coriander leaves.
