Dahi Masala Aloo

Cubes of potatoes cooked in a yogurt based gravy and garnished with ginger juliennes - tastes great with rotis and rice. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 1/4 cup yogurt
  • 4 medium potatoes, peeled and cut into cubes
  • 2 tablespoons ghee
  • 1 1/4 tablespoons cumin seeds
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 4 teaspoons coriander powder
  • 2 1/2 teaspoons cumin powder
  • 1 teaspoon red chilli powder
  • 1/4 teaspoon turmeric powder
  • Salt to taste
  • 1 teaspoon garam masala powder
  • 1 tablespoon chopped fresh coriander leaves 
  • Ginger juliennes for garnishing

Method

  1. Heat ghee in a non-stick pan. Add cumin seeds and sauté for a while.
  2. Combine ginger paste and garlic paste in a bowl. Add a little water and mix well to dilute the pastes. Add this to the pan, mix well and sauté for 2-3 minutes.
  3. Add coriander powder, cumin powder, red chilli powder and turmeric powder. Mix well and cook for a while.
  4. Add potatoes, mix well and cook for 2-3 minutes.
  5. Add 1 cup water, salt, stir to mix and bring it to a boil. Lower heat, cover and cook till the potatoes are soft.
  6. Add yogurt, garam masala powder and chopped coriander. Mix well and bring to a boil.
  7. Garnish with ginger juliennes and serve hot.
