Be a kid or a teenage or an adult or an oldie, chicken lovers trend all over the world at all times! One meat that is a favourite of all beyond belief! When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Chicken Changezi - SK Khazana Recipe

  • Chicken cut into medium sized pieces on the bone 750 grams

  • Yogurt 1/2 cup

  • Ginger-garlic paste 2 1/2 tablespoons

  • Lemon juice 1 1/2 tablespoons

  • Salt to taste

  • Oil 2 tablespoons

  • Fresh tomato puree 2 cups

  • Red chilli powder 2 tablespoons

  • Coriander powder 1 tablespoon

  • Garam masala powder 1 teaspoon

  • Chaat masala 1 teaspoon

  • Milk 2-3 tablespoons

  • Browned onion paste 2 tablespoons

  • Cashewnut paste 1-2 tablespoons

  • Green chillies slit 2-3

  • Dried fenugreek leaves 1 teaspoon

  • Fresh cream 2-3 tables to garnish

  • Fresh coriander leaves chopped 1 tablespo to garnish

Method

Step 1

Take chicken in a bowl, add yogurt, 1½ tbsps ginger-garlic paste, lemon juice and salt, mix well and set aside to marinate for 30 minutes.

Step 2

Heat oil in a non-stick pan, add remaining ginger-garlic paste and sauté well, add tomato puree, mix well and let the mixture come to a boil.

Step 3

Add red chilli powder, coriander powder, garam masala powder and chaat masala powder and mix well. Cover and cook for 3-5 minutes or until the oil is separated

Step 4

Add milk, browned onion paste, cashewnut paste and cook for 2 minutes. Add marinated chicken, green chillies and mix well, and cook on high heat for 2 minutes. Cover and cook until the chicken is done.

Step 5

Add dried fenugreek leaves, fresh cream and coriander leaves and mix well.

Step 6

Transfer into a serving dish, garnish with some fresh cream and coriander leaves and serve hot.
