You should always stack your fridge with at least a dozen of them. Why? Handiest food to have around! Kids are hungry? Make some egg sandwiches. Guests come in, make an egg curry or egg biryani. You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Anda Bhaji Pav Recipe

  • Eggs hard-boiled, peeled and quartered 4-5

  • Pavs slit horizontally 4

  • Oil 2 tablespoons

  • Butter 1 tablespoon + as required

  • Ginger-garlic paste 1 tablespoon

  • Onions sliced 2 medium

  • Tomatoes chopped 2 medium

  • Red chilli powder ½ teaspoon

  • Turmeric powder ¼ teaspoon

  • Coriander powder 1 teaspoon

  • Green chillies chopped 1-2

  • Garam masala powder 1 teaspoon

  • Salt to taste

  • Chaat masala ½ teaspoon

  • Fresh coriander leaves chopped, 1 tablespoon + for garnishing

  • Lemon slices for garnishing


Step 1

Heat oil and 1 tablespoon butter in a non-stick pan. Add ginger-garlic paste and sauté well.

Step 2

Add onions, mix and sauté till translucent. Add tomatoes, mix and cook till tomatoes turn pulpy.

Step 3

Add chilli powder, turmeric powder and coriander powder and mix well. Add little water, mix and cook till the oil separates from the masala.

Step 4

Add green chillies and garam masala powder, mix. Add some more water, mix and cook for 1-2 minutes.

Step 5

Add salt and mix well. Add chaat masala and eggs, mix and cook for a minute. Add coriander leaves and mix well. Remove from heat and set aside.

Step 6

Heat some butter in a non-stick pan. Place the pavs in it and toast till lightly golden from both sides.

Step 7

Place spoonsful of anda bhaji on each toasted pav, garnish with coriander leaves and serve hot with onion rings and lemon slices.
