Ingredients
- 1 large sweet potato (shakarkand), peeled and grated
- 2 tablespoons ghee
- 4 cups full fat milk
- A generous pinch of saffron
- ½ cup sugar
- ½ teaspoon green cardamom powder
- 2 tablespoons chopped pistachios + to sprinkle
- 2 tablespoons chopped almonds + to sprinkle
- 2 tablespoons chopped cashewnuts + to sprinkle
Method
- Heat ghee in a deep non-stick pan, add sweet potato, mix and sauté on medium heat for 5-6 minutes.
- Add milk and mix well. Add saffron, mix and cook on low heat for 10-15 minutes or till the sweet potato is cooked completely.
- Add sugar and green cardamom powder, mix well and cook till sugar dissolves.
- Add pistachios, almonds and cashewnuts and mix well.
- Transfer into a serving bowl, sprinkle remaining pistachios, almonds and cashewnuts and serve.
