Ingredients
- 1½ cups sprouted green gram (ankurit moong)
- 1 medium avocado
- ¼ teaspoon turmeric powder
- Salt to taste
- 1 medium sweet potato, boiled and peeled
- 1 medium onion, chopped
- 1 small tomato, chopped
- 1 tablespoon lemon juice
- ¼ cup roasted peanuts
- ½ cup chana jor garam
- 2 tablespoons chopped fresh coriander leaves
- Fresh coriander sprig for garnish
Method
- Boil sufficient water in a deep non-stick pan, add turmeric powder and salt and mix well.
- Add sprouted green gram and blanch for 4-5 minutes. Drain the water and allow to cool.
- Cut sweet potato into 1 centimetre pieces. Halve avocado, remove the seed, scoop out the pulp and cut into 1 centimetre pieces.
- Transfer blanched sprouted green gram into a bowl. Add avocado, sweet potato, onion, tomato, lemon juice, salt, roasted peanuts, chana jor garam and coriander leaves and mix well.
- Transfer into a serving bowl, garnish with coriander sprig and serve.
