Savoury Foxtail Millet Waffle

Ingredients

  • ¾ cup foxtail millet
  • ½ cup yogurt
  • 2 tablespoons boiled and crushed green peas
  • 2 tablespoons grated carrot
  • 2 tablespoons chopped cabbage
  • 2 tablespoons chopped fresh coriander leaves
  • 2 green chillies, chopped
  • Crushed black peppercorns to taste
  • Salt to taste
  • 2-3 tablespoons grated processed cheese
  • ¼ teaspoon turmeric powder
  • ½ teaspoon chaat masala
  • Melted butter to grease
  • Green chutney for serving

Method

  1. Transfer foxtail millet into a grinder jar and grind to fine powder.
  2. Transfer into a bowl, add yogurt, green peas, carrot, cabbage, coriander leaves, green chillies, crushed black peppercorns, salt, processed cheese, turmeric powder and chaat masala and mix well. Add 1 cup water and mix well to make a smooth batter. Set aside for 10-15 minutes.
  3. Heat a waffle iron and grease with melted butter, pour a ladleful of batter, close the lid and cook for 8-10 minutes on medium heat. Make more waffles with remaining batter.
  4. Cut and place on a serving plates and serve hot with green chutney.
