Potato Pizza

Ingredients

  • 8-10 medium potatoes, peeled 
  • 4 tablespoons dried breadcrumbs
  • 4 tablespoons corn flour
  • Crushed black peppercorns to taste
  • Salt to taste
  • 4 tablespoons grated processed cheese
  • 1 teaspoon sugar
  • ½ teaspoon dried mixed herbs + to sprinkle
  • ½ teaspoon red chilli flakes + to sprinkle
  • Oil for greasing
  • Pizza sauce as required
  • Chopped mozzarella cheese as required
  • Onion slices as required
  • Mushroom slices as required
  • Boiled sweet corn kernels as required
  • Red capsicum slices as required
  • Fresh basil leaves as required
  • Crumbled feta cheese to sprinkle

Method

  1. Grate the potatoes thickly, put into a muslin cloth, gather the edges together and squeeze to remove excess moisture.
  2. Transfer the potatoes into another bowl. Add breadcrumbs, corn flour, crushed peppercorns, salt, processed cheese, sugar, dried mixed herbs and red chilli flakes and mix well.
  3. Grease a shallow non-stick pan with sufficient oil and spread half the potato mixture evenly.
  4. Place the pan on heat, cover and cook on low heat for 6-8 minutes.
  5. Flip, spread pizza sauce evenly. Sprinkle mozzarella cheese, onion slices, mushroom slices, corn kernels and red capsicum slices on top.
  6. Sprinkle crushed peppercorns, dried herbs and red chilli flakes on top.
  7. Cover and cook on low heat for 4-5 minutes or till cheese melts and the base is crisp.
  8. Transfer onto a serving plate, place a few basil leaves and sprinkle feta cheese on top.
  9. Make one more pizza similarly.
  10. Cut into wedges and serve hot.
