Ingredients
·100 grams firm tofu, grated
·8 brown bread slices
·2 tsps olive oil
·2 tsps butter + for applying
·4 tsps finely chopped garlic
·1 large onion, chopped
·4 sprigs of fresh thyme, roughly chopped
·20-25 button mushrooms, thickly sliced
·Salt to taste
·3-4 tbsps grated processed cheese
·Black pepper powder to taste
Method
1.Heat olive oil and butter in a non-stick pan, add garlic and sauté till golden brown. Add onion, mix and sauté till translucent.
2.Add thyme and mushrooms, mix and sauté on high heat for 3-4 minutes. Add salt and mix well. Transfer into a bowl.
3.Add tofu, cheese and black pepper powder and mix well.
4.Apply butter on 4 bread slices and place a portion of the mixture on top of each of them. Cover with the remaining bread slices and apply some butter on top.
5.Heat an electric sandwich griller. Place the sandwiches, 2 at a time, on it with the butter side facing up. Grill for 4-5 minutes.
6.Diagonally halve the sandwiches, arrange them on serving plates and serve hot with tomato ketchup.
