Ingredients
- 300 grams boneless chicken breast, cut into 1 inch pieces
- Salt to taste
- 1 teaspoon red chilli powder
- ½ teaspoon dried mixed herbs
- 1 teaspoon onion powder
- Oil to deep-fry
- 1 egg
- Black pepper powder to taste
- 2 cups corn flour
- 2 cups panko
- 2 teaspoons garlic powder
- 1 teaspoon smoked paprika
- 1½ tablespoons butter
- 1 teaspoon chopped garlic
- 2 tablespoons chopped parsley
- ¼ cup parmesan cheese powder
Method
- Take chicken in a large bowl, add salt, red chilli powder, dried mixed herbs and onion powder and mix well. Set aside for 5-10 minutes.
- Heat sufficient oil in a kadai.
- Break egg into a bowl, add salt and black pepper powder and whisk well.
- Take corn flour in a bowl. Take panko on a large plate, add garlic powder and smoked paprika and mix well.
- Coat chicken piece in corn flour, dip in the egg and coat with panko crumbs.
- Gently slide the chicken pieces into hot oil and deep-fry till golden brown and crisp. Drain on absorbent paper.
- Heat butter in a pan, add garlic and sauté till golden brown. Add parsley and mix well. Add fried chicken and mix well.
- Add parmesan cheese powder and toss well.
- Transfer onto a serving platter and serve hot.
