Multigrain Cookies

Ingredients

  • 2½ cups finger millet (ragi)flour
  • 1¼ cups refined flour (maida)
  • 1¼ cups crushed whole oats
  • 1¼ cups brown sugar
  • ½ cup castor sugar
  • 5 tablespoons melon seeds (magaz)
  • 5 tablespoons sunflower seeds
  • 5 tablespoons pumpkin seeds
  • 1 tablespoon chopped raisins
  • 1½ teaspoons baking powder 
  • ½ teaspoon nutmeg powder
  • 1 teaspoon cinnamon powder 
  • ¼ cup butter
  • 4 red apples
  • 1 lemon

Method

  1. Preheat oven to 180º C.
  2. Take finger millet flour in a large mixing bowl, add refined flour, crushed whole oats, brown sugar, castor sugar, melon seeds, sunflower seeds, pumpkin seeds, raisins, baking powder, cinnamon powder and nutmeg powder and mix well. Store in an air tight container.
  3. To make one batch of cookies, take 1 cup of the mixture in another bowl, add butter and mix to make a dough. 
  4. Divide the dough into equal portions and shape each portion into a ball and flatten it slightly. Place the cookies on a baking tray lined with parchment sheet ensuring that there is enough space between them. If you do not have butter paper, grease the tray lightly with some oil and keep the cookies on it.
  5. Keep the tray in the preheated oven and bake for 10-12 minutes.  
  6. Take the tray out of the oven and let the cookies cool down before packing them in individual tiffin boxes.
  7. Scrape off the wax from the apples gently with a knife. Wash them well and dry them properly with a kitchen towel.
  8. Quarter them and remove the seeds. Further slice them and put into a bowl. Sprinkle lemon juice over them and mix well. Pack them in individual tiffin boxes.
