Jackfruit Ice Cream

Ingredients
- 1 cup chopped ripe jackfruit
 - ⅓ cup brown sugar
 - 1 cup fresh cream
 - ½ cup chopped white chocolate
 - ½ cup ripe jackfruit puree
 - ¼ cup condensed milk
 - 2 cups whipped cream
 
Method
- Cook brown sugar in a non-stick pan till it caramelizes (approximately 1-2 minutes).
 - Add jackfruit and mix well till all the pieces are well coated and transfer onto a greased plate.
 - Heat fresh cream in another non-stick pan. Add white chocolate and mix till it melts. Transfer this into a large bowl.
 - Add jackfruit puree and mix well. Add condensed milk and mix till well combined.
 - Add 1 cup whipped cream and fold till well mixed. Add remaining whipped cream and gently fold in.
 - Transfer the mixture into an air tight container, add the caramelized jackfruit and lightly swirl. Place the lid on and keep it in the freezer for 6-8 hours or till set.
 - Serve in scoops.
