Ingredients
- 1 cup grated white radish
- 2 cups chopped radish greens
- 1½ cups pearl millet flour (bajre ka atta) + for dusting
- Salt to taste
- 2 tablespoons white sesame seeds
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 2 teaspoons sugar
- ½ teaspoon red chilli powder
- ¼ teaspoon turmeric powder
- 2 teaspoons ginger-green chilli paste
- ¾ cup yogurt
- 1 tablespoon oil
- Ghee for applying
- Pickle to serve
Method
- Take white radish in a large bowl, add radish greens and salt and mix well.
- Add pearl millet flour, white sesame seeds, cumin powder, coriander powder, sugar, red chilli powder, turmeric powder, ginger-green chilli paste and yogurt and knead well. Add oil and knead into a soft dough.
- Divide the dough into small equal portions and shape them into balls. Dust the worktop with some pearl millet flour, place a dough ball on it and roll it into a thin disc.
- Heat a non-stick tawa. Place the disc on it and cook for 1-2 minutes. Flip and cook the other side for 1-2 minutes.
- Apply some ghee on each side and continue to cook for a few seconds. Make more dhebras similarly.
- Arrange the dhebras on a serving plate and serve with pickle.
