Ingredients
- 1½ cups chopped fresh fenugreek leaves
- 15-20 medium prawns, peeled and deveined
- 2 tablespoons oil
- 8-10 curry leaves
- 2 medium onions, chopped
- 1 tablespoon ginger-garlic paste
- 1 cup fresh tomato puree
- ½ teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 tablespoon coriander powder
- 2 teaspoons red chilli powder
- 2 teaspoons malvani masala
- Salt to taste
- 2-3 tablespoons chopped fresh coriander leaves + for garnish
- 1 tablespoon lemon juice
- Chapattis for serving
Method
- Heat oil in a non-stick pan, add curry leaves and onions, mix and sauté till golden brown.
- Add ginger-garlic paste, mix and sauté for 1 minute.
- Add fresh tomato puree, mix well, cover and cook till oil separates.
- Add turmeric powder, cumin powder, coriander powder, red chilli powder, Malvani masala and salt and mix. Add ¼ cup water and mix well.
- Add prawns, mix well, cover and cook on medium heat for 4-5 minutes.
- Add fenugreek leaves, mix well and cook for 2-3 minutes on medium heat.
- Add coriander leaves and lemon juice and mix well.
- Transfer into a serving bowl and serve hot with chapattis.
