Ingredients
· 8 eggs
· Salt to taste
· 3 tbsps oil
· 2 medium onions, chopped
· 2 green chillies, chopped
· 1 cup fresh tomato puree
· ½ tsp cumin powder
· 1½ tsps coriander powder
· 1½ tsps red chilli powder
· ½ tsp turmeric powder
· 2 tsps meat masala
· 2 tbsps chopped fresh coriander leaves
· Fresh coriander sprig for garnish
· Pav for serving
Method
1. Break eggs in a bowl. Add salt and whisk well.
2. Heat 1 tbsp oil in a pan. Add eggs and cook for 4-5 minutes. Transfer in a bowl and set aside.
3. Heat remaining oil in the same pan. Add onions, salt and sauté till golden brown.
4. Add green chillies and mix well. Add tomato puree and mix well. Cook on medium heat for 5-6 minutes or till oil separates.
5. Add cumin powder, coriander powder, red chilli powder, turmeric powder, meat masala and mix well.
6. Add 2 cups water and mix well. Once the mixture comes to a boil, add cooked eggs and mix well.
7. Add coriander and mix well. Add ½ cup water and mix well. Cook for 2-3 minutes more.
8. Transfer in a serving bowl. Garnish with coriander sprig and serve hot with pav.
