Ingredients
- 1½ cups garlic cloves (lehsun)
- 3 tablespoons oil + for deep frying
- 1½ teaspoons cumin seeds
- 2 medium onions, chopped
- Salt to taste
- 2-3 green chillies, chopped
- 2 medium tomatoes, chopped
- ¼ teaspoon turmeric powder
- 1 teaspoon red chilli powder
- 2 teaspoons coriander powder
- ½ teaspoon garam masala powder
- ¼ cup yogurt
- 2-3 tablespoons chopped fresh coriander leaves
- ½ lemon
- Fresh coriander sprig for garnish
- Paranthas for serving
Method
- Heat sufficient oil in a kadai, add garlic cloves and deep-fry till golden brown. Drain on absorbent paper.
- Heat 3 tablespoons oil on a tawa. Add cumin seeds and once they start to change the colour, add onions, salt and sauté till golden brown.
- Add green chillies, tomatoes and cook till the tomatoes are pulpy.
- Add turmeric powder, red chilli powder, coriander powder, garam masala powder and mix well.
- Add yogurt and sauté for 2 minutes. Add 1 cup water and mix well.
- Add fried garlic cloves, coriander leaves and mix well. Squeeze lemon and mix well.
- Transfer on a serving plate, garnish with coriander sprig and serve hot with paranthas.
