Ingredients
- 750 grams boneless mutton, cut into 2 inch pieces
- 2-3 green chillies, diagonally sliced
- 10-12 garlic cloves, vertically sliced
- 2 tablespoons finely chopped ginger
- 1 teaspoon fennel (saunf) powder
- 1 teaspoon black pepper powder
- 1 teaspoon red chilli powder
- ½ teaspoon turmeric powder
- 1 teaspoon garam masala powder
- Salt to taste
- 1 lemon, halved
- 2 large onions, thinly sliced
- 1 sprig of curry leaves
- 3 tablespoons oil
- 2 tablespoons chopped fresh coconut
- A few fried curry leaves to garnish
- Onion slices to serve
- Lemon slices to serve
Method
- Put the mutton in a pressure cooker, add green chillies, garlic, ginger, fennel powder, black pepper powder, red chilli powder, turmeric powder, garam masala powder, salt, squeeze the juice of lemon and add onions and curry leaves and mix till the mutton pieces are well coated with the masala. Place the cooker on medium heat, add ⅓ cup water, mix, cover and cook under pressure for 4-5 whistles.
- Open the cooker once the pressure has reduced completely.
- Heat oil in a shallow pan. Add coconut, mix and saute till golden.
- Transfer the mutton into the pan and mix well. Cook on high heat till the mixture becomes dry.
- Transfer the mutton roast into a serving plate, garnish with fried curry leaves and serve hot with onion rings and lemon slices.
