Kitchen King Masala

Ingredients

  • 2 teaspoons mustard seeds
  • 1 teaspoon fenugreek seeds
  • 2 teaspoons fennel seeds
  • 2 teaspoons cumin seeds
  • 16-18 black peppercorns
  • 6 green cardamoms
  • 2 black cardamoms
  • 16-18 cloves
  • 2 blades of mace
  • 2 inch cinnamon 
  • 2 teaspoons split Bengal gram (chana dal)
  • 4 star anise
  • 6 bay leaves
  • 6 teaspoons coriander seeds
  • 2 teaspoons poppy seeds
  • 4-5 dried red chillies
  • 2 teaspoons turmeric powder
  • ½ teaspoon nutmeg powder
  • 1 teaspoon dried ginger powder
  • 1 teaspoon black salt

Method

  1. Heat a pan, add mustard seeds, fenugreek seeds, fennel seeds, cumin seeds, black peppercorns, green cardamoms, black cardamoms, cloves, mace, cinnamon, Bengal gram, star anise, bay leaves, coriander seeds, poppy seeds and dried red chillies, mix well and sauté on low heat till fragrant.
  2. Transfer into a plate and allow to cool down to room temperature. Transfer into a grinder and grind to a fine powder.
  3. Transfer the powder into a dry bowl and add turmeric powder, nutmeg powder, dried ginger powder and black salt and mix well.
  4. Store into an airtight container and use as required.
