Kairi Ki Kadhi

Ingredients

  • 2 medium raw mangoes, peeled, seeded and chopped
  • ½ cup gram flour (besan)
  • ½ teaspoon turmeric powder
  • ½ teaspoon red chilli powder
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • ½ teaspoon fenugreek seeds
  • 8-10 curry leaves
  • 1 medium onion, sliced
  • Salt to taste
  • 1 tablespoon chopped jaggery
  • 2-3 tablespoons chopped fresh coriander leaves + to sprinkle
  • Steamed rice for serving

Method

  1. Put the raw mangoes into a grinder jar, add ½ cup water and grind to a fine paste.
  2. Transfer into a bowl, add gram flour and whisk well. Add turmeric powder and red chilli powder and mix. Add 2½ cups water and mix well. 
  3. Heat oil in a deep non-stick pan, add mustard seeds and once they start to splutter, add fenugreek seeds, curry leaves and onion, mix and sauté till onion turns translucent.
  4. Add raw mango mixture and mix well, Add salt and mix well. Add 1 cup water, mix well and cook on medium heat, stirring continuously, for 8-10 minutes.
  5. Add jaggery and continue to stir till jaggery dissolves. Add coriander leaves and mix well.
  6. Transfer into a serving bowl, garnish with coriander leaves and serve hot with steamed rice.
