Ingredients
- 2 medium raw mangoes, peeled, seeded and chopped
- ½ cup gram flour (besan)
- ½ teaspoon turmeric powder
- ½ teaspoon red chilli powder
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- ½ teaspoon fenugreek seeds
- 8-10 curry leaves
- 1 medium onion, sliced
- Salt to taste
- 1 tablespoon chopped jaggery
- 2-3 tablespoons chopped fresh coriander leaves + to sprinkle
- Steamed rice for serving
Method
- Put the raw mangoes into a grinder jar, add ½ cup water and grind to a fine paste.
- Transfer into a bowl, add gram flour and whisk well. Add turmeric powder and red chilli powder and mix. Add 2½ cups water and mix well.
- Heat oil in a deep non-stick pan, add mustard seeds and once they start to splutter, add fenugreek seeds, curry leaves and onion, mix and sauté till onion turns translucent.
- Add raw mango mixture and mix well, Add salt and mix well. Add 1 cup water, mix well and cook on medium heat, stirring continuously, for 8-10 minutes.
- Add jaggery and continue to stir till jaggery dissolves. Add coriander leaves and mix well.
- Transfer into a serving bowl, garnish with coriander leaves and serve hot with steamed rice.
