Ingredients
- ¾ cup jaggery powder
- ½ cup yogurt
- ¼ cup oil
- 1 cup whole wheat flour (gehun ka atta)
- ½ teaspoon baking soda
- 1 teaspoon baking powder
- A pinch of cinnamon powder
- ¼ cup milk
- Coffee of your choice to serve
Method
- Preheat the oven to 180ºC.
- Take yogurt in a bowl, Add oil and jaggery powder in 3-4 batches and beat with an electric beater till the jaggery melts and the mixture turns light.
- Sift whole wheat flour, baking soda, baking powder and cinnamon powder directly into the bowl and gently fold in.
- Add milk and mix till well combined.
- Transfer the batter into a 7 x 2 x 3 silicon loaf mould and tap it a few times to remove the air bubbles if any . Place it on a baking tray and bake in the preheated oven for 20-25 minutes.
- Bring the tray out of the oven and allow the cake to cool slightly. De-mould and allow to cool completely.
- Slice and serve with cups of hot coffee or tea.
