Ingredients
- 2 tablespoons crushed green garlic bulbs
- ½ cup chopped green garlic stalks + for garnish
- 1 large brinjal (bharta baingan)
- 2 tablespoons oil + for applying
- 2-3 green chillies, chopped
- 1 teaspoon cumin seeds
- 1 large onion, roughly chopped
- 1 large tomato, roughly chopped
- ½ teaspoon red chilli powder
- ¼ teaspoon turmeric powder
- ½ teaspoon garam masala powder
- Salt to taste
- Bhakri for serving
Method
- Apply oil on the brinjal and roast it on direct flame for 8-10 minutes or till it is cooked and its skin charred. Allow to cool, peel and mash roughly.
- Heat oil in a non-stick wok, add cumin seeds and once they change colour, add green garlic bulbs and green chillies, mix and sauté for 1 minute.
- Add onion, mix and sauté till translucent. Add tomato, mix and sauté for 3-4 minutes.
- Add red chilli powder, turmeric powder, garam masala powder and salt, mix and saute for 1-2 minutes.
- Add cooked brinjal and green garlic stalks, mix well and cook for 1-2 minutes.
- Transfer into a serving bowl, garnish with green garlic stalks and serve hot with bhakri.
