Hare Lehsun Aur Baingan Ka Bharta

Ingredients

  • 2 tablespoons crushed green garlic bulbs
  • ½ cup chopped green garlic stalks + for garnish
  • 1 large brinjal (bharta baingan)
  • 2 tablespoons oil + for applying
  • 2-3 green chillies, chopped
  • 1 teaspoon cumin seeds
  • 1 large onion, roughly chopped
  • 1 large tomato, roughly chopped
  • ½ teaspoon red chilli powder
  • ¼ teaspoon turmeric powder
  • ½ teaspoon garam masala powder
  • Salt to taste
  • Bhakri for serving 

Method

  1. Apply oil on the brinjal and roast it on direct flame for 8-10 minutes or till it is cooked  and its skin charred. Allow to cool, peel and mash roughly.
  2. Heat oil in a non-stick wok, add cumin seeds and once they change colour, add green garlic bulbs and green chillies, mix and sauté for 1 minute.
  3. Add onion, mix and sauté till translucent. Add tomato, mix and sauté for 3-4 minutes.
  4. Add red chilli powder, turmeric powder, garam masala powder and salt, mix and saute for 1-2 minutes.
  5. Add cooked brinjal and green garlic stalks, mix well and cook for 1-2 minutes.
  6. Transfer into a serving bowl, garnish with green garlic stalks and serve hot with bhakri.
