Ghotlelya Vangyachi Bhaji

This is a mish mash preparation of green brinjals. The brinjals are cooked in a pressure cooker with some aromatic ingredients to turn into a delicious concoction that goes well with bhakris. A typical farmers’ meal which even the urbanites will enjoy.

Ingredients

  • 5-6 medium green brinjals, stems removed and cut into 1 inch pieces
  • 3-4 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 2 green chillies, chopped
  • 1 inch ginger, chopped
  • 1 tablespoon chopped garlic
  • 1 sprig of curry leaves
  • 2 medium onions, chopped
  • Salt to taste
  • ½ teaspoon turmeric powder
  • 1 teaspoon red chilli powder
  • ½ teaspoon garam masala powder
  • 2 tablespoons chopped fresh coriander leaves
  • Spring onion bulb for serving
  • Green chilli for serving
  • Jowar Bhakri for serving

Method

  1. Heat oil in a pressure cooker. Add mustard seeds and once they start to splutter, add cumin seeds, green chillies, ginger and garlic, mix and sauté till golden brown.
  2. Add curry leaves, onions and salt, mix and sauté till onions turn golden brown.
  3. Add green brinjals, turmeric powder, red chilli powder and garam masala powder and mix well.
  4. Add 1½ cups water and mix well. Cover with the lid and cook on medium heat till 4-5 whistles are released. Open the lid once the pressure settles completely.  
  5. Add coriander leaves and mash the brinjals well.
  6. Transfer into a serving bowl and serve hot with spring onion bulb, green chilli and jowar bhakri.
