Ingredients
- 5-6 medium green brinjals, stems removed and cut into 1 inch pieces
 - 3-4 tablespoons oil
 - 1 teaspoon mustard seeds
 - 1 teaspoon cumin seeds
 - 2 green chillies, chopped
 - 1 inch ginger, chopped
 - 1 tablespoon chopped garlic
 - 1 sprig of curry leaves
 - 2 medium onions, chopped
 - Salt to taste
 - ½ teaspoon turmeric powder
 - 1 teaspoon red chilli powder
 - ½ teaspoon garam masala powder
 - 2 tablespoons chopped fresh coriander leaves
 - Spring onion bulb for serving
 - Green chilli for serving
 - Jowar Bhakri for serving
 
Method
- Heat oil in a pressure cooker. Add mustard seeds and once they start to splutter, add cumin seeds, green chillies, ginger and garlic, mix and sauté till golden brown.
 - Add curry leaves, onions and salt, mix and sauté till onions turn golden brown.
 - Add green brinjals, turmeric powder, red chilli powder and garam masala powder and mix well.
 - Add 1½ cups water and mix well. Cover with the lid and cook on medium heat till 4-5 whistles are released. Open the lid once the pressure settles completely.
 - Add coriander leaves and mash the brinjals well.
 - Transfer into a serving bowl and serve hot with spring onion bulb, green chilli and jowar bhakri.
