Fresh Dates Halwa

Ingredients

  • 10-15 fresh red dates, seeded and chopped
  • 1 cup semolina (suji/rawa)
  • 5 tablespoons ghee 
  • A pinch of salt 
  • 2½ cups milk
  • 1 cup sugar
  • ¼ teaspoon green cardamom powder
  • Blanched pistachio slivers as required
  • Almond slivers for garnish

Method

  1. Put the dates into a pressure cooker, add ¾ cup water, mix, and cook for 3-4 whistles. Open the cooker once the pressure has reduced completely.
  2. Grind the mixture coarsely with a hand blender.
  3. Heat a non-stick pan, add semolina and dry roast for 6-8 minutes. Transfer into a bowl. 
  4. Heat 3 tablespoons ghee in the same non-stick pan. Add roasted semolina and mix. Add dates and salt, mix and cook for 1 minute. 
  5. Add milk and mix. Cover and cook for 5-6 minutes. 
  6. Add sugar, cardamom powder and pistachios, mix well, cover and cook for 2 minutes. 
  7. Drizzle 2 tablespoons ghee and mix well.  
  8. Transfer into a serving bowl, garnish with some pistachio slivers, almond slivers and serve.
