Ingredients
- 10-15 fresh red dates, seeded and chopped
- 1 cup semolina (suji/rawa)
- 5 tablespoons ghee
- A pinch of salt
- 2½ cups milk
- 1 cup sugar
- ¼ teaspoon green cardamom powder
- Blanched pistachio slivers as required
- Almond slivers for garnish
Method
- Put the dates into a pressure cooker, add ¾ cup water, mix, and cook for 3-4 whistles. Open the cooker once the pressure has reduced completely.
- Grind the mixture coarsely with a hand blender.
- Heat a non-stick pan, add semolina and dry roast for 6-8 minutes. Transfer into a bowl.
- Heat 3 tablespoons ghee in the same non-stick pan. Add roasted semolina and mix. Add dates and salt, mix and cook for 1 minute.
- Add milk and mix. Cover and cook for 5-6 minutes.
- Add sugar, cardamom powder and pistachios, mix well, cover and cook for 2 minutes.
- Drizzle 2 tablespoons ghee and mix well.
- Transfer into a serving bowl, garnish with some pistachio slivers, almond slivers and serve.
