Ingredients
- 1½ avocados
- ½ cup blanched pistachios, peeled and sliced + for sprinkling
- ½ cup condensed milk
- 1 teaspoon vanilla essence
- 1 cup whipping cream
- Blanched and peeled pistachios for garnish
Method
- Halve the avocado, discard the seed, scoop out the flesh and put into a blender jar.
- Add pistachios, condensed milk, vanilla essence and whipping cream and blend to a smooth mixture. Transfer into an air tight container, sprinkle some pistachios and mix lightly.
- Sprinkle some more of the pistachios, cover with a lid and place it in the freezer for 6-8 hours.
- Scoop out the ice cream into serving bowls and serve garnished with some more blanched pistachios.
