Avocado And Pistachios Ice Cream

Most of us know Pistachio ice-cream to be green. Now some more green of the avocado makes this ice cream creamier and also more nutritious. This is Sanjeev Kapoor exclusive recipe.

Method

  1. Halve the avocado, discard the seed, scoop out the flesh and put into a blender jar. 
  2. Add pistachios, condensed milk, vanilla essence and whipping cream and blend to a smooth mixture. Transfer into an air tight container, sprinkle some pistachios and mix lightly.
  3. Sprinkle some more of the pistachios, cover with a lid and place it in the freezer for 6-8 hours. 
  4. Scoop out the ice cream into serving bowls and serve garnished with some more blanched pistachios.
