Ingredients
- 300 grams cauliflower (gobhi), cut into large florets
- 1½ tablespoons ghee
- 1 teaspoon cumin seeds
- 1 medium onion, finely chopped
- 1 tablespoon ginger-garlic paste
- 1 cup tomato puree
- Salt to taste
- 1 teaspoon coriander powder
- ½ teaspoon cumin powder
- ½ teaspoon red chilli powder
- ¼ teaspoon turmeric powder
- 2 teaspoons cashewnut paste
- 1 teaspoon dried fenugreek leaves (kasuri methi)
- A pinch of garam masala powder
- 2 tablespoons chopped fresh coriander leaves
- 1 tablespoon fresh cream
- Fresh coriander sprig for garnish
Method
- Heat ghee in a non-stick kadai, add cumin seeds and saute till their colour changes.
- Add onion, mix and sauté till golden brown. Add ginger-garlic paste, mix and sauté for 1 minute. Add tomato puree and salt and mix well. Cook till the oil separates.
- Add coriander powder, cumin powder, red chilli powder and turmeric powder, mix and sauté for 1 minute.
- Add cauliflower and mix well. Add 1 cup water, mix, cover and cook for 10-12 minutes.
- Add cashewnut paste and dried fenugreek leaves and mix well.
- Add garam masala powder, coriander leaves and fresh cream and mix.
- Transfer into a serving bowl, garnish with coriander sprig and serve hot.
