Ingredients
- 2 king fish (surmai)darnes
- 8-10 garlic cloves
- 2 green chillies
- 8-10 fresh coriander sprigs
- ½ teaspoon turmeric powder
- 1 teaspoon Malvani masala
- 1¼ teaspoons red chilli powder
- ½ lemon
- Salt to taste
- ½ cup fine semolina (suji)
- Oil for shallow frying
- Green chutney for serving
- Onion roundels for serving
- Lemon wedges for serving
Method
- Put garlic in a grinder jar, add green chillies, coriander stems and ¼ cup water and grind to a fine paste.
- Transfer the ground paste on a plate, add turmeric powder, Malvani masala and 1 teaspoon red chilli powder.
- Squeeze lemon into the above mixture, add salt and mix well. Apply this marinade over fish darnes evenly and set aside for 10-15 minutes.
- Spread semolina on a plate, add remaining red chilli powder and salt and mix well.
- Roll the marinated fish darnes evenly in semolina mixture.
- Heat sufficient oil on an iron tawa, place the fish darnes on it and shallow-fry on medium heat for 3-4 minutes on each side or till crisp. Drain on absorbent paper.
- Arrange them on a serving plate and serve hot with green chutney, onion roundels and lemon wedges.
