Ingredients

  • 2 avocados
  • 4 eggs 
  • 4 sourdough bread slices
  • 8 teaspoons olive oil
  • 2 medium onions
  • 2 green chillies, broken
  • 8-10 fresh coriander sprigs
  • 2 medium tomatoes
  • 2 lemons, halved
  • Salt to taste
  • Crushed black peppercorns to taste
  • Pro V Fusion Berries and Nut Mix

Method

  1. Put the sourdough bread slices in a toaster and toast them till crisp. Keep them on a plate.
  2. To cook each egg heat 2 teaspoons olive oil in a shallow non-stick pan. Break an egg into it and cook. Transfer them on individual plates.
  3. Halve the avocados. For each portion scoop out the pulp of one half into a bowl and mash.
  4. Transfer half onion into a chopper, add 1 green chilli, 2-3 coriander sprigs and ½ tomato and chop coarsely. Add this to avocados. Squeeze the juice of ½ lemon and mix well. Add salt and crushed black peppercorns and mix well.
  5. In each portion serve 2 toasted bread slices with, avocado mixture, 1 fried egg and Pro V Fusion Berries and Nut Mix.
