Ingredients
- 2 avocados
- 4 eggs
- 4 sourdough bread slices
- 8 teaspoons olive oil
- 2 medium onions
- 2 green chillies, broken
- 8-10 fresh coriander sprigs
- 2 medium tomatoes
- 2 lemons, halved
- Salt to taste
- Crushed black peppercorns to taste
- Pro V Fusion Berries and Nut Mix
Method
- Put the sourdough bread slices in a toaster and toast them till crisp. Keep them on a plate.
- To cook each egg heat 2 teaspoons olive oil in a shallow non-stick pan. Break an egg into it and cook. Transfer them on individual plates.
- Halve the avocados. For each portion scoop out the pulp of one half into a bowl and mash.
- Transfer half onion into a chopper, add 1 green chilli, 2-3 coriander sprigs and ½ tomato and chop coarsely. Add this to avocados. Squeeze the juice of ½ lemon and mix well. Add salt and crushed black peppercorns and mix well.
- In each portion serve 2 toasted bread slices with, avocado mixture, 1 fried egg and Pro V Fusion Berries and Nut Mix.
