Ingredients
- Plum compote
- 8-10 fresh plums
- ½ cup castor sugar
- A pinch of salt
- Crumble
- 1½ cups refined flour (maida)
- A pinch of salt
- ½ cup brown sugar
- 2 teaspoons castor sugar
- 1 teaspoon cinnamon powder
- ¼ teaspoon nutmeg (jaiphal) powder
- ½ cup melted butter
- Cake
- ½ cup milk
- 1 teaspoon vinegar
- ½ cup butter
- ¼ cup oil
- 1¼ cups condensed milk
- 1½ cups refined flour (maida)
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 2 teaspoons vanilla essence
- Icing sugar for dusting
Method
- To make the plum compote, cut the plums into wedges and discard the seeds. Further roughly chop the wedges.
- Heat a non-stick shallow pan, add the plums and castor sugar, mix well and cook till the sugar melts. Add ¼ cup water and salt, mix and continue to cook till pulpy.
- Take the pan off the heat, transfer the compote into a bowl and set aside to cool completely.
Preheat the oven to 180° C. - To make the crumble, sift refined flour and salt into a large bowl. Add brown sugar, castor sugar, cinnamon powder and nutmeg powder and mix well. Add melted ghee and mix till the mixture resembles breadcrumbs. Set aside.
- To make the cake, take milk in a jar, add vinegar and mix well. Set aside for 5 minutes.
- Take butter in another large bowl, add oil and beat with an electric beater till the mixture is well combined. Add condensed milk and continue to beat till the mixture turns light and fluffy.
- Sift refined flour, baking powder and baking soda directly into the bowl. Gently fold in till lightly combined. Add milk-vinegar mixture and vanilla essence and continue to fold in to make a smooth batter.
- Transfer the batter into a greased and lined 7 inch square baking tin. Spread the plum compote over it evenly. Generously sprinkle the crumble mixture over this and place the tin in the preheated oven and bake for 55-60 minutes.
- Bring the baking tin out of the oven and allow to cool completely. De-mould the cake, place it on a plate and dust with icing sugar.
- Cut into squares, place them in serving plates and serve.
