Chocolate Almond Cookies

The combination of chocolate and almonds makes these cookies so fabulous. You will want to dunk them in a glass of milk or dip in coffee. The latter tastes awesome.

Ingredients

  • 100 grams milk chocolate
  • Vertically halved almonds as required
  • 1 tablespoon flax seeds powder
  • 2 teaspoons instant coffee powder
  • ¾ cup butter at room temperature
  • ½ cup castor sugar
  • ½ cup brown sugar
  • 1 teaspoon vanilla essence
  • 1½ cups refined flour (maida)
  • 1 tablespoon corn flour
  • ½ teaspoon baking powder
  • ⅓ cup cocoa powder
  • A pinch of salt
  • 2 tablespoons milk

Method

  1. Preheat oven to 180º C.
  2. Take flax seeds powder in a bowl, add 2½ tablespoons water and mix well. Set aside for 5-10 minutes.
  3. Take coffee powder in another bowl, add 2 tablespoons water and mix well.
  4. Chop milk chocolate roughly and keep in a third bowl.
  5. Take butter in a big bowl, add castor sugar and brown sugar and beat till well combined.
  6. Add the flax seeds mixture and vanilla essence and mix well.
  7. Sift refined flour, corn flour, baking powder, cocoa powder and salt directly into the bowl with beaten mixture and mix well gently.
  8. Add coffee mixture and milk and mix again. Add half the chopped chocolate and mix.
  9. Divide the dough into equal portions and roll into balls. Flatten each ball and arrange on a baking tray lined with parchment paper keeping sufficient distance between each.
  10. Arrange the almonds and remaining chocolate on top and press lightly.
  11. Keep the tray in the preheated oven and bake oven for 15-20 minutes.
  12. Allow to cool, arrange on a serving plate and serve.
