Ingredients
- 100 grams milk chocolate
- Vertically halved almonds as required
- 1 tablespoon flax seeds powder
- 2 teaspoons instant coffee powder
- ¾ cup butter at room temperature
- ½ cup castor sugar
- ½ cup brown sugar
- 1 teaspoon vanilla essence
- 1½ cups refined flour (maida)
- 1 tablespoon corn flour
- ½ teaspoon baking powder
- ⅓ cup cocoa powder
- A pinch of salt
- 2 tablespoons milk
Method
- Preheat oven to 180º C.
- Take flax seeds powder in a bowl, add 2½ tablespoons water and mix well. Set aside for 5-10 minutes.
- Take coffee powder in another bowl, add 2 tablespoons water and mix well.
- Chop milk chocolate roughly and keep in a third bowl.
- Take butter in a big bowl, add castor sugar and brown sugar and beat till well combined.
- Add the flax seeds mixture and vanilla essence and mix well.
- Sift refined flour, corn flour, baking powder, cocoa powder and salt directly into the bowl with beaten mixture and mix well gently.
- Add coffee mixture and milk and mix again. Add half the chopped chocolate and mix.
- Divide the dough into equal portions and roll into balls. Flatten each ball and arrange on a baking tray lined with parchment paper keeping sufficient distance between each.
- Arrange the almonds and remaining chocolate on top and press lightly.
- Keep the tray in the preheated oven and bake oven for 15-20 minutes.
- Allow to cool, arrange on a serving plate and serve.
