Ingredients
- 300 grams chicken mince
- 5 round wonton sheets
- Salt to taste
- 2 fresh red chillies, finely chopped
- 1 teaspoon finely chopped ginger
- 1½ teaspoons chopped celery
- 2 teaspoons finely chopped garlic
- Crushed black peppercorns to taste
- 2-3 spring onion bulbs, finely chopped
- 3 tablespoons finely chopped spring onion greens
- 1 teaspoon dark soy sauce
- Refined flour slurry to apply
- 2 tablespoons oil
- Noodles
- 3 cups boiled noodles
- 2 tablespoons oil
- 1 tablespoon finely chopped garlic
- 1 tablespoon red chilli paste
- 1 tablespoon finely chopped celery
- ½ tablespoon finely chopped ginger
- 2 spring onion bulbs, vertically sliced
- 1 cup shredded cabbage
- 1 small green capsicum, cut into thin strips
- Crushed black peppercorns to taste
- Salt to taste
- 1 teaspoon dark soy sauce
- 1 teaspoon red chilli sauce
- Chopped spring onion greens for garnish
Method
- Take chicken mince in a bowl, add salt, fresh red chillies, ginger, celery, garlic, crushed black peppercorns, spring onion bulbs, spring onion greens and dark soy sauce and mix till well combined.
- Place a portion of the chicken mixture in the centre of each wonton wrapper and apply some refined flour slurry on the edges and fold it in half. Bring the edges close to make a crescent and make pleats on the upper side and press to seal. These are pot stickers.
- To make noodles, heat oil in a non-stick pan, add garlic and red chilli paste, mix and sauté on high heat for 2-3 minutes.
- Add celery, ginger and spring onion bulbs, mix and saute for 1-2 minutes. Add cabbage and green capsicum, mix and sauté on high heat for 1-2 minutes.
- Add noodles, crushed black peppercorns, salt, dark soy sauce and red chilli sauce and toss till well combined. Switch the heat off.
- To cook the pot stickers, heat oil in a non-stick shallow pan, place the pot stickers in it and cook on high heat for 2-3 minutes. Reduce heat to medium, sprinkle 2-3 tablespoons water, immediately cover the pan with a lid and cook for 3-4 minutes. Switch the heat off.
- To assemble, transfer the noodles into a serving bowl and sprinkle spring onion greens on top. Keep two chop sticks on top of the bowl and arrange the pot stickers over them. Sprinkle some more spring onion greens and hot.
