Wasabi Prawns Spring Rolls

Ingredients
· ½ tsp wasabi paste
· 8-10 tiger prawns, shelled, deveined with the tails intact
· 8-10 spring roll sheets (6” x 6”)
· 1 tbsp sweet chilli sauce + to serve
· ½ tsp dark soy sauce
· ½ tsp garlic powder
· 1 tsp onion powder
· ½ tsp red chilli flakes
· Salt to taste
· Refined flour slurry for brushing
· Oil for deep frying
Method
1. Take sweet chilli sauce in a bowl, add dark soy sauce, wasabi paste, garlic powder, onion powder, red chilli flakes and salt and mix well.
2. Add the prawns and mix well. Set aside to marinate for 5-10 minutes.
3. Place a spring roll sheet, apply some refined flour slurry on the edges, place a prawn and roll tightly.
4. Heat sufficient oil in a kadai. Gently slide in the prawn rolls and deep-fry till golden brown and crisp. Drain on absorbent paper.
5. Arrange the spring rolls on a serving platter and serve hot with sweet chilli sauce.
