Ingredients

  • 250 grams boneless chicken, cut into thin strips
  • 4 whole wheat flour rotis
  • 2 tablespoons oil + as required
  • 1 medium onion, sliced
  • ¼ teaspoon turmeric powder
  • 1½ teaspoons + a pinch red chilli powder
  • 1 teaspoon coriander powder
  • ½ teaspoon cumin powder
  • 3 teaspoons ginger-garlic paste
  • 1 large tomato, finely chopped
  • Salt to taste
  • 1½ teaspoons chaat masala
  • 1 teaspoon dried mango powder (amchur)
  • ½ teaspoon black salt
  • 4 eggs
  • 2-3 tablespoons chopped fresh coriander leaves + to sprinkle
  • 1 medium onion, finely chopped
  • Chilli vinegar to drizzle

Method

  1. Heat oil in a non-stick pan, add sliced onions and sauté till golden brown.
  2. Add turmeric powder, 1 teaspoon chilli powder, coriander powder and cumin powder, mix and sauté. Add ginger-garlic paste, mix and sauté for 1 minute.
  3. Add tomato and salt and mix well. Add 1 tablespoon water, mix well, cover and cook for 3-4 minutes.
  4. Meanwhile to prepare spice mix, mix together chaat masala, dried mango powder, black salt and ½ teaspoon chilli powder in a small bowl.
  5. Add chicken to the pan, mix well, cover and cook for 2-3 minutes or till the chicken is done.
  6. Break eggs into a bowl, add salt and a pinch of red chilli powder and whisk well.
  7. Add coriander leaves to the chicken and mix well.
  8. To make each frankie, heat some oil on a tawa, pour some beaten eggs and place a roti on top immediately. Cook for 30 seconds. Flip and cook for 1 minute more. Take the roti off the tawa and place on the worktop.
  9. Sprinkle some of the prepared spice mix on top. Place a portion of chicken in the centre, sprinkle some chopped onions, coriander leaves and drizzle chilli vinegar. Sprinkle spice mix generously and roll tightly. Make more frankies in the same way.
  10. Arrange the frankies on a serving plate and serve.
