Ingredients
- ½ cups cooked Basmati rice
- 100 grams boiled noodles
- 150 grams boneless chicken, cut into thin strips
- 2 tablespoons oil
- ½ tablespoon finely chopped ginger
- 1½ tablespoons finely chopped garlic
- 2-3 spring onion bulbs, thinly sliced
- 3-4 French beans, diagonally cut into 1 inch pieces
- 1 small carrot, peeled and cut into thin strips
- ½ small red capsicum, cut into thin strips
- ½ small yellow capsicum, cut into thin strips
- ½ small green capsicum, cut into thin strips
- Salt to taste
- ½ cup thinly shredded cabbage
- 1 teaspoon chicken stock cube powder
- 2-3 tablespoons schezwan sauce
- Spring onion greens, thinly sliced for garnish
Method
- Heat oil in a kadai, add ginger and garlic, mix well and sauté for 1-2 minutes. Add spring onion bulbs, mix and sauté for a few seconds.
- Add chicken, mix and sauté on high heat for 2-3 minutes. Add French beans and carrot, mix and sauté for 1-2 minutes. Add red capsicum, yellow capsicum and green capsicum, mix and continue to sauté for 1-2 minutes.
- Add salt and cabbage and mix well. Add chicken stock cube powder and mix till well combined.
- Add noodles and toss well. Add rice and toss well. Add schezwan sauce and toss till well combined.
- Transfer into a serving bowl and serve hot garnished with spring onion greens.
