Combination Rice-Noodles

Excellent way to make your kids eat some healthy vegetables. This dish made with rice, noodles and a medley of vegetables and schezwan sauce is so delicious that even those who avoid vegetables will just gobble it up.

Ingredients

  • ½ cups cooked Basmati rice
  • 100 grams boiled noodles
  • 150 grams boneless chicken, cut into thin strips
  • 2 tablespoons oil
  • ½ tablespoon finely chopped ginger
  • 1½ tablespoons finely chopped garlic
  • 2-3 spring onion bulbs, thinly sliced
  • 3-4 French beans, diagonally cut into 1 inch pieces
  • 1 small carrot, peeled and cut into thin strips
  • ½ small red capsicum, cut into thin strips
  • ½ small yellow capsicum, cut into thin strips
  • ½ small green capsicum, cut into thin strips
  • Salt to taste
  • ½ cup thinly shredded cabbage
  • 1 teaspoon chicken stock cube powder
  • 2-3 tablespoons schezwan sauce
  • Spring onion greens, thinly sliced for garnish

Method 

  1. Heat oil in a kadai, add ginger and garlic, mix well and sauté for 1-2 minutes. Add spring onion bulbs, mix and sauté for a few seconds.
  2. Add chicken, mix and sauté on high heat for 2-3 minutes. Add French beans and carrot, mix and sauté for 1-2 minutes. Add red capsicum, yellow capsicum and green capsicum, mix and continue to sauté for 1-2 minutes.
  3. Add salt and cabbage and mix well. Add chicken stock cube powder and mix till well combined. 
  4. Add noodles and toss well. Add rice and toss well.  Add schezwan sauce and toss till well combined. 
  5. Transfer into a serving bowl and serve hot garnished with spring onion greens.
