Cherry French Toast

Ingredients

  • Cherry compote as required
  • Fresh cherries for garnish
  • 8 brioche bread slices
  • ½ cup cream cheese
  • 2-3 tablespoons powdered sugar
  • 1 teaspoon vanilla essence              
  • 2 cups whipped cream                
  • 1 cup readymade custard
  • 3 eggs                        
  • 4 tablespoons castor sugar
  • A pinch of cinnamon powder
  • ½ cup milk
  • Butter to cook
  • Fresh mint sprigs for garnish

Method

  1. Take cream cheese in a bowl, add powdered sugar and ½ teaspoon vanilla essence and whisk well.
  2. Add 1 cup whipped cream and whisk with light hands.
  3. Take custard in another bowl, add remaining whipped cream and mix with light hands. Transfer this mixture into a piping bag.
  4. Break eggs into a bowl, add castor sugar, ½ teaspoon vanilla essence, cinnamon powder and ½ cup milk and mix well.
  5. Place 4 brioche bread slices on worktop and pipe the custard mixture over each of them. Cover with remaining brioche slices.
  6. Heat butter in a non-stick pan. Dip each prepared sandwich in egg mixture and place in the pan. Cook on medium heat for 2-3 minutes. Flip and cook for 2 minutes more.
  7. Halve each sandwich, transfer onto a serving plate, pipe cream cheese mixture on top. Drop dollops of cherry compote, garnish with fresh cherries and mint sprigs and serve.
