Ingredients
- Cherry compote as required
- Fresh cherries for garnish
- 8 brioche bread slices
- ½ cup cream cheese
- 2-3 tablespoons powdered sugar
- 1 teaspoon vanilla essence
- 2 cups whipped cream
- 1 cup readymade custard
- 3 eggs
- 4 tablespoons castor sugar
- A pinch of cinnamon powder
- ½ cup milk
- Butter to cook
- Fresh mint sprigs for garnish
Method
- Take cream cheese in a bowl, add powdered sugar and ½ teaspoon vanilla essence and whisk well.
- Add 1 cup whipped cream and whisk with light hands.
- Take custard in another bowl, add remaining whipped cream and mix with light hands. Transfer this mixture into a piping bag.
- Break eggs into a bowl, add castor sugar, ½ teaspoon vanilla essence, cinnamon powder and ½ cup milk and mix well.
- Place 4 brioche bread slices on worktop and pipe the custard mixture over each of them. Cover with remaining brioche slices.
- Heat butter in a non-stick pan. Dip each prepared sandwich in egg mixture and place in the pan. Cook on medium heat for 2-3 minutes. Flip and cook for 2 minutes more.
- Halve each sandwich, transfer onto a serving plate, pipe cream cheese mixture on top. Drop dollops of cherry compote, garnish with fresh cherries and mint sprigs and serve.
