Radish Roesti

There are some who do not savour radish. But give them this snack and they will begin to enjoy it. We have given radish a delicious makeover, transforming it into a crispy and flavourful ‘Radish Roesti’ that’ll leave you craving for it often!

Ingredients

  • 2 large radishes
  • 2 medium wafer potatoes
  • Crushed black peppercorns
  • 1 teaspoon red chilli flakes
  • 4 tablespoons chopped fresh parsley
  • Salt to taste
  • 2-3 tablespoons mayonnaise
  • 2 teaspoons wasabi paste
  • Butter for cooking
  • Diagonally sliced spring onion greens for garnish

Method

  1. Peel and grate radishes and wafer potatoes. Transfer both into a bowl of water.
  2. Pour into a colander and strain. Squeeze out excess moisture. Transfer on a kitchen towel and pat dry.
  3. Transfer into a bowl, add crushed black peppercorns, red chilli flakes, parsley and salt and mix well.
  4. Take mayonnaise in a bowl, add wasabi paste and mix well.
  5. Heat butter in a shallow non-stick pan. Place a ring mould in the pan and place a portion of radish mixture and press gently. Remove the mould and cook till the underside is golden brown. Flip, add some more butter and cook on other side till golden brown.
  6. Make other roestis in similar way.
  7. Transfer them on a serving plate, pipe the mayonnaise mixture on top, garnish with spring onion greens and serve hot.
