Ingredients
- 6 eggs
- Salt to taste
- ½ teaspoon red chilli powder
- ½ teaspoon turmeric powder
- 4 tablespoons chopped onion
- 4 tablespoons chopped tomato
- 2 green chillies, chopped
- 4 tablespoons chopped fresh coriander leaves
- 2 teaspoons butter
- 2 teaspoons oil
- 100 grams chicken tikka, shredded into pieces
- Buttered pavs to serve
Method
- Break eggs into a large bowl and whisk well with a fork.
- Add salt, red chilli powder, turmeric powder, onion, tomato, green chillies and coriander leaves and whisk well.
- To make each omelette, heat 1 teaspoon butter with 1 teaspoon oil in a shallow non-stick pan. Add ½ portion of the egg mixture, sprinkle ½ portion of chicken tikka pieces over the eggs and cook for 2-3 minutes.
- Flip and cook for 2-3 more on medium heat.
- Transfer omelettes onto individual serving plates and serve hot with buttered pavs.
