Changezi Omelette

Ingredients

  • 6 eggs
  • Salt to taste
  • ½ teaspoon red chilli powder
  • ½ teaspoon turmeric powder
  • 4 tablespoons chopped onion
  • 4 tablespoons chopped tomato
  • 2 green chillies, chopped
  • 4 tablespoons chopped fresh coriander leaves 
  • 2 teaspoons butter
  • 2 teaspoons oil
  • 100 grams chicken tikka, shredded into pieces
  • Buttered pavs to serve

Method

  1. Break eggs into a large bowl and whisk well with a fork.
  2. Add salt, red chilli powder, turmeric powder, onion, tomato, green chillies and coriander leaves and whisk well.
  3. To make each omelette, heat 1 teaspoon butter with 1 teaspoon oil in a shallow non-stick pan. Add ½ portion of the egg mixture, sprinkle ½ portion of chicken tikka pieces over the eggs and cook for 2-3 minutes. 
  4. Flip and cook for 2-3 more on medium heat.
  5. Transfer omelettes onto individual serving plates and serve hot with buttered pavs.
