Ingredients
- 3 cups cooked Basmati rice
- 2 tablespoons butter
- 4 button mushrooms
- 2 spring onions with greens
- 1 tablespoon finely chopped garlic
- 1 tablespoon finely chopped celery
- 1-2 fresh red chillies, diagonally sliced
- 1 tablespoon finely chopped ginger
- Salt to taste
- White pepper powder to taste
- 1 teaspoon green chilli sauce
- A dash of soy sauce
Method
- Diagonally slice spring onion bulbs and finely chop the greens.
- Thinly slice mushrooms.
- Heat butter in a non-stick pan, add garlic and celery, mix well and saute for 1 minute.
- Add sliced spring onion bulbs, mix and sauté for 1 minute.
- Add red chillies and ginger and mix well.
- Add mushrooms, mix and sauté on high heat for 2-3 minutes.
- Add salt, white pepper powder, green chilli sauce and soy sauce, mix well and suate for 1 minute.
- Add Basmati rice and mix till well combined. Add most of the chopped spring onion greens and mix well.
- Transfer the rice into a serving bowl, garnish with remaining spring onion greens and serve hot.
