Ingredients
·8-10 ready-made chicken lollipops
·2 tbsps oil
·1½ tbsps finely chopped garlic
·½ tbsp finely chopped ginger
·1 medium onion, sliced
·2 spring onion bulbs, chopped
·2-3 green chillies, slit
·2-3 fresh red chillies, slit
·1 medium green capsicum, sliced
·Salt to taste
·1 tbsp red chilli sauce
·1 tsp soy sauce
·½ tsp honey
·1-2 tbsps cornflour slurry
·Crushed black peppercorns to taste
·2 spring onion greens, chopped
·Sliced spring onion greens for garnish
Method
1.Heat oil in a non-stick wok. Add garlic and ginger and sauté for 1-2 minutes. Add onion and spring onion bulbs, mix and sauté for 1-2 minutes.
2.Add green chillies, red chillies, capsicum and salt, mix and sauté well. Add red chilli sauce, soy sauce and honey and mix well.
3.Add ¼ cup water and mix. Add cornflour slurry and mix well. Cook for 1 minute.
4.Add crushed black peppercorns, chicken lollipop and chopped spring onion greens and mix well.
5.Transfer onto a serving platter and serve hot garnished with sliced spring onion greens.
