Ingredients
· 8-10 ready-made chicken lollipops
· 2 tbsps oil
· 1½ tbsps finely chopped garlic
· ½ tbsp finely chopped ginger
· 1 medium onion, sliced
· 2 spring onion bulbs, chopped
· 2-3 green chillies, slit
· 2-3 fresh red chillies, slit
· 1 medium green capsicum, sliced
· Salt to taste
· 1 tbsp red chilli sauce
· 1 tsp soy sauce
· ½ tsp honey
· 1-2 tbsps cornflour slurry
· Crushed black peppercorns to taste
· 2 spring onion greens, chopped
· Sliced spring onion greens for garnish
Method
1. Heat oil in a non-stick wok. Add garlic and ginger and sauté for 1-2 minutes. Add onion and spring onion bulbs, mix and sauté for 1-2 minutes.
2. Add green chillies, red chillies, capsicum and salt, mix and sauté well. Add red chilli sauce, soy sauce and honey and mix well.
3. Add ¼ cup water and mix. Add cornflour slurry and mix well. Cook for 1 minute.
4. Add crushed black peppercorns, chicken lollipop and chopped spring onion greens and mix well.
5. Transfer onto a serving platter and serve hot garnished with sliced spring onion greens.
