Apple Pie Cookies

The all-time favourite apple pie has been converted into cookies. Absolutely delicious, these cookies is a must try. This is Sanjeev Kapoor exclusive recipe.

Ingredients

  • 2 medium green apples
  • Dough
  • 2 cups refined flour (maida) + for dusting
  • ¼ teaspoon cinnamon powder
  • A pinch of salt
  • ¼ cup castor sugar
  • ¾ cup cold butter cubes
  • Stuffing
  • 2 tablespoons butter
  • 1 lemon    
  • ¼ cup brown sugar
  • ¼ teaspoon cinnamon powder
  • A pinch of nutmeg powder
  • Milk for brushing

Method

  1. Take refined flour in a bowl, add cinnamon powder, salt and castor sugar and mix well.
  2. Add butter and rub it in with fingertips till the mixture resembles breadcrumbs.
  3. Add cold water and mix till all the ingredients come together. Wrap the dough in cling paper and keep it in the refrigerator for 1 hour.
  4. Peel green apples, core and roughly chop them.
  5. For stuffing, heat butter in a non-stick pan. Add apples and zest 1 lemon directly into the pan. Add brown sugar and mix well. Add cinnamon powder and nutmeg powder, mix and cook on medium heat for 6-8 minutes or till the apples are pulpy and the mixture is thick.
    Transfer into a bowl and allow to cool.
  6. Preheat the oven to 180º C.
  7. Dust some refined flour on the worktop and roll out the dough into a medium thick disk.
  8. Dust some more refined flour on the upper surface as well.
  9. Cut roundels with a cookie cutter and cut thin strips from the remaining sheet.
  10. Transfer the cut roundels on a baking tray lined with butter paper.
  11. Place a portion of the apple mixture in the centre of each roundel, apply milk on the edges of the roundels and cover with the cut strips Apply milk over the strips and cut out the extra portion with cookie cutter.
  12. Keep the tray in the preheated oven and bake for 15-20 minutes.
  13. Bring the tray out of the oven and let the cookies cool down. Arrange them on a serving plate, sprinkle some icing sugar over them and serve.
