Ingredients
· 2 cups refined flour (maida)
· 3 tbsps melted ghee
· ½ tsp carom seeds (ajwain)
· ½ tsp cumin seeds
· Salt to taste
· Oil for greasing + for deep frying
Method
- Take refined flour in a large bowl. Add melted ghee, carom seeds, cumin seeds and salt and mix well. Add 1 cup water little by little and knead to a stiff dough. Cover with a damp muslin cloth and set aside for 10-15 minutes.
- Grease the worktop with some oil. Take half of the dough and shape it into a ball.
- Place it on the greased worktop and roll it into thick disc. Using a small round cookie cutter, cut out small crescents (this is kaju).
- Heat sufficient oil in a kadai. Slide in the prepared kajus and deep fry on medium heat till they turn golden and crisp. Drain on an absorbent paper. Allow to cool completely.
- Store in an air-tight container and serve as required.
