Ingredients

·         2 cups refined flour (maida)

·         3 tbsps melted ghee

·         ½ tsp carom seeds (ajwain)

·         ½ tsp cumin seeds

·         Salt to taste

·         Oil for greasing + for deep frying

Method 

  1. Take refined flour in a large bowl. Add melted ghee, carom seeds, cumin seeds and salt and mix well. Add 1 cup water little by little and knead to a stiff dough. Cover with a  damp muslin cloth and set aside for 10-15 minutes.
  2. Grease the worktop with some oil. Take half of the dough and shape it into a ball.
  3. Place it on the greased worktop and roll it into thick disc. Using a small round cookie cutter, cut out small crescents (this is kaju).
  4. Heat sufficient oil in a kadai. Slide in the prepared kajus and deep fry on medium heat till they turn golden and crisp. Drain on an absorbent paper. Allow to cool completely.
  5. Store in an air-tight container and serve as required.
