Ingredients
- 1 cup potatoes boiled, peeled and grated
- ¾ cup cauliflower, grated
- ¼ cup green capsicu,m finely chopped
- ¼ cup carrots, finely chopped
- ¼ cup French beans, finely chopped
- ¼ cup fresh coriander leaves, finely chopped
- ¼ cup dried breadcrumbs
- 1 teaspoon cumin powder
- 1 teaspoon chaat masala
- 1 teaspoon coriander powder
- ½ teaspoon garam masala powder
- 1 teaspoon red chilli powder
- Salt to taste
- Crushed black peppercorns to taste
- 2-3 tablespoons cornflour
- Oil for deep-frying
- Panko breadcrumbs for coating
- Tomato ketchup to serve
Method
- Mix together potatoes, cauliflower, capsicum, carrots, French beans, coriander leaves, breadcrumbs, cumin powder, chaat masala, coriander powder, garam masala powder, chilli powder, salt and crushed peppercorns in a bowl.
- Divide the prepared mixture into equal portions and shape into nuggets.
- Mix cornflour and water as required into a thin slurry.
- Heat sufficient oil in a kadai.
- Dip the nuggets in slurry and coat with panko breadcrumbs.
- Deep-fry nuggets in hot oil till golden brown. Drain on absorbent paper.
- Arrange the nuggets on a serving platter and serve hot with tomato ketchup.
