Vegetable Ishtew

Ingredients 

  • 2 medium potatoes, peeled ,cubed and parboiled
  • 2 medium carrots, peeled, cubed and parboiled
  • 7-8 cauliflower florets, parboiled
  • 6-8 French beans, 1 inch pieces and parboiled
  • 2 tablespoons coconut oil
  • 1 star anise
  • 2 inch cinnamon stick 
  • 2 bay leaves
  • 4 cloves
  • 2 medium onions,chopped
  • 4 green chillies, slit
  • 10-12 curry leaves
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • 2 cups coconut milk
  • Salt to taste

Method

  1. Boil water in a deep pan. Add potatoes, carrots, French beans and cauliflower and let them cook till just done.
  2. Strain and set aside. Heat coconut oil in a kadai. Add star anise, cinnamon, bay leaf and cloves and sauté for half a minute.
  3. Add onions and sauté till transluscent. Add green chillies and curry leaves and mix. Add ginger paste and garlic paste and continue to sauté for a minute.
  4. Add coconut milk and stir. Add salt and cook till it just comes to a boil. Add the boiled vegetables and simmer for two minutes. Serve hot with appams.
