Ingredients list for Vegetable Ishtew

  • 2 medium bunch Potatoes cubed and parboiled
  • 2 medium Coconut milk cubed and parboiled
  • 7-8 florets Cauliflower parboiled
  • 6-8 French beans 1 inch pieces and parboiled
  • 2 tablespoons Coconut oil
  • 1 Star anise
  • 2 inch stick Cinnamon
  • 2 Bay leaves
  • 4 Cloves
  • 2 medium Onions,chopped
  • 4 Green chillies slit
  • 10-12 Curry leaves
  • 1 teaspoon Ginger paste
  • 1 teaspoon Garlic paste
  • 2 cups Coconut milk
  • to taste Salt

Method

  1. Boil water in a deep pan. Add potatoes, carrots, French beans and cauliflower and let them cook till just done.
  2. Strain and set aside. Heat coconut oil in a kadai. Add star anise, cinnamon, bay leaf and cloves and sauté for half a minute.
  3. Add onions and sauté till transluscent. Add green chillies and curry leaves and mix. Add ginger paste and garlic paste and continue to sauté for a minute.
  4. Add coconut milk and stir. Add salt and cook till it just comes to a boil. Add the boiled vegetables and simmer for two minutes. Serve hot with appams.
