Ingredients list for Turai Gosht
- 1 medium Ridge gourd (turai) scraped and cut into 3-4 inch pieces
- 750 grams Mutton on bone, cut into 1 inch pieces
- 1 tablespoon Oil
- 1 teaspoon Cumin seeds
- 4-5 Black peppercorns
- 1 Black cardamom
- 3-4 Cloves
- 1 medium Onion finely chopped
- 1 tablespoon Ginger-garlic paste
- 1/4 teaspoon Turmeric powder
- 1 teaspoon Red chilli powder
- 1 teaspoon Coriander powder
- 1 inch Ginger sliced
- 1 large Tomato finely chopped
- to taste Salt
- 1 teaspoon Garam masala powder
- for garnishing Fresh mint sprigs
- for garnishing Green chilli paste
Method
- Heat oil in a non-stick pressure cooker. Add cumin seeds, peppercorns, black cardamom and cloves and sauté till fragrant.
- Add onion and sauté till golden. Add ginger-garlic paste, mix and cook for a half a minute.
- Add turmeric powder, chilli powder, coriander powder and ginger and sauté for a minute. Add mutton, mix and cook for 2-3 minutes. Add tomato and salt, mix and cook till tomato turns pulpy.
- Halve ridge gourds and cut into medium pieces.
- Add garam masala powder and ridge gourd pieces in the cooker along with some water and mix well. Cover and pressure cook on medium heat for 5-6 whistles.
- Serve hot garnished with a mint sprigs and green chilli.
