By Sanjeev Kapoor 26 Oct 2020 in Recipes Course New Update Main Ingredients Tomatoes, Salt Cuisine Maharashtrian Course Dals and Kadhis Prep Time 11-15 minutes Cook time 31-40 minutes Serve 4 Taste Tangy Level of Cooking Easy Others Veg Advertisment Ingredients list for Tomato Saar-SK Khazana 3-4 Tomatoes roughly chopped to taste Salt 2 tablespo teaspoon Fresh coriander leaves chopped 4-5 Garlic cloves 1 inch Ginger roughly chopped 1 Green chilli broken 1 tablespoon Oil 1 teaspoon Mustard seeds 1 teaspoon Cumin seeds 12-14 Curry leaves 1/4 teaspoon Asafoetida 1/4 teaspoon Turmeric powder 1 teaspoon Sugar for garnish Fresh coriander sprig Method Pressure cook tomatoes and salt in 1 cup water till the pressure is released 4-5 times. Blend together 2-3 tablespoons coriander leaves, garlic, ginger and green chilli with some water to a smooth paste. Open the cooker when the pressure reduces completely and blend the tomatoes to a fine puree with a hand blender. Heat oil in a deep non-stick pan. Add mustard seeds and let them splutter. Add cumin seeds, curry leaves and asafoetida, mix and sauté till fragrant. Add prepared green paste and mix well. Add 1 cup water and mix. Add turmeric powder and mix. Strain the tomato mixture into the pan and press to extract all the flesh. Add sugar and salt, mix well and simmer for 5-7 minutes. Add 1 teaspoon coriander leaves, mix well and bring to a boil.
