Ingredients list for Tomato Saar-SK Khazana
- 3-4 Tomatoes roughly chopped
- to taste Salt
- 2 tablespo teaspoon Fresh coriander leaves chopped
- 4-5 Garlic cloves
- 1 inch Ginger roughly chopped
- 1 Green chilli broken
- 1 tablespoon Oil
- 1 teaspoon Mustard seeds
- 1 teaspoon Cumin seeds
- 12-14 Curry leaves
- 1/4 teaspoon Asafoetida
- 1/4 teaspoon Turmeric powder
- 1 teaspoon Sugar
- for garnish Fresh coriander sprig
Method
- Pressure cook tomatoes and salt in 1 cup water till the pressure is released 4-5 times.
- Blend together 2-3 tablespoons coriander leaves, garlic, ginger and green chilli with some water to a smooth paste.
- Open the cooker when the pressure reduces completely and blend the tomatoes to a fine puree with a hand blender.
- Heat oil in a deep non-stick pan. Add mustard seeds and let them splutter. Add cumin seeds, curry leaves and asafoetida, mix and sauté till fragrant.
- Add prepared green paste and mix well. Add 1 cup water and mix. Add turmeric powder and mix.
- Strain the tomato mixture into the pan and press to extract all the flesh. Add sugar and salt, mix well and simmer for 5-7 minutes.
- Add 1 teaspoon coriander leaves, mix well and bring to a boil.
- Garnish with coriander sprig and serve hot.
