Ingredients list for South Indian Fried Chicken
- 2 Boneless chicken breasts ,cut into cubes
- ¼ cup Semolina (suji)
- to taste Salt
- 1 teaspoon Coriander powder
- ¼ teaspoon Turmeric powder
- 1 teaspoon Red chilli powder
- 1½ tablespoons Crushed black peppercorns
- Juice of 1 lemon
- 1 tablespoon Ginger-garlic paste
- 15-18 Curry leaves
- 3 tablespoons Rice flour
- for deep-frying Oil
- 1 tablespoon Coconut oil
- 1 teaspoon Mustard seeds
- 3-4 Green chillies ,slit
- 1 tablespoon Fresh coriander leaves chopped
Method
- Combine chicken pieces, salt, coriander powder, turmeric powder, red chilli powder, 1 tablespoon crushed peppercorns, half the lemon juice and ginger-garlic paste in a bowl. Finely chop 8-10 curry leaves and add to the mixture and mix well. Set aside to marinate for 15 minutes.
- Mix together rice flour, semolina and salt in another bowl. Coat the marinated chicken pieces with this mixture.
- Heat sufficient oil in a kadai. Deep-fry chicken pieces till golden and crisp. Drain on an absorbent paper.
- Heat coconut oil in a non-stick pan. Add mustard seeds and let them splutter. Add green chillies and mix. Add the remaining chopped and whole curry leaves, remaining crushed peppercorns, little water and mix well.
- Add fried chicken, salt and toss. Add the remaining lemon juice and coriander leaves. Serve hot.
