Ingredients list for Sabz Biryani

  • 1 1/2 cups Basmati Rice soaked
  • 1/2 cup Green Peas shelled
  • 1 medium Carrot , chopped
  • 1/4 small Cauliflower separated into florets
  • 4-5 French beans chopped
  • 2 medium Tomatoes chopped
  • 3 medium Onions
  • 4-5 strands Saffron (kesar)
  • 1/4 cup Milk
  • to taste Salt
  • 2 tablespoons Oil
  • 3 tablespoons Ghee
  • 1 inch piece Ginger chopped
  • 1 teaspoon Cumin seeds
  • 2 Green chillies chopped
  • 2 Black cardamoms
  • 4 Green cardamoms
  • 4-5 Cloves
  • 1 inch stick Cinnamon
  • 1 Bay leaf
  • 2 tablespoons Fresh coriander leaves chopped
  • 1/2 cup Yogurt
  • 1 teaspoon Red chilli powder
  • 1 tablespoon Coriander powder
  • 1/2 teaspoon Turmeric powder
  • 1 tablespoon Fresh mint (pudina) roughly chopped
  • a few drops Kewra water

Method

  1. Chop one onion and slice the remaining two. Soak saffron in warm milk. Place the rice in a microwave casserole with five cups of water and salt to taste. Cook, covered, on Microwave HIGH (100%) for ten minutes. Drain and set aside.
  2. In a separate microwave bowl place sliced onions with two tablespoons of oil. Cook, uncovered, on Microwave HIGH (100%) for four minutes. Drain the onion on an absorbent paper. Place three tablespoons of ghee with chopped onion, ginger, cumin seeds, green chillies, black cardamoms, green cardamoms, cloves, cinnamon and bay leaf in a large microwave casserole.
  3. Cook, uncovered, on Microwave HIGH (100%) for three minutes. Mix in peas, carrot, cauliflower, French beans, tomato, coriander leaves, yogurt, red chilli powder, coriander powder, turmeric powder, salt and one and a half cups of water. Cook, covered, on Microwave HIGH (100%) for twelve minutes.
  4. In another large microwave casserole, place half the vegetables and cover them with half the rice. Repeat the layers once. Cook, covered, on Microwave HIGH (100%) for twenty minutes.
  5. Sprinkle saffron, cooked sliced onions, mint leaves and kewra water on rice and cook, covered, on Microwave HIGH (100%) for ten minutes. Serve hot.
