Pepper Chicken Uttappam

The non-vegetarians will simply love this uttappam that is topped with chicken and plenty of crushed pepper. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Pepper Chicken Uttappam

  • 400 grams Boneless chicken cut into thin strips
  • to taste Crushed black peppercorns
  • as required Dosa Batter
  • 1 tablespoon Oil
  • ½ teaspoon Cumin seeds
  • 7-8 Curry leaves
  • 1 medium Onion finely chopped
  • 1 tablespoon Garlic finely chopped
  • 1 inch Ginger finely chopped
  • 1 Green chilli finely chopped
  • 1 teaspoon Coriander powder
  • to taste Salt
  • 1 teaspoon + for greasing Coconut oil
  • 1 tablespoon Fresh coriander leaves chopped

Method

  1. Heat oil in a non-stick pan. Add cumin seeds and sauté for 30 seconds.
  2. Add curry leaves and sauté. Add onion, mix and sauté till it turns light brown. Add garlic, mix and sauté. Add ginger, mix and sauté for 1 minute.
  3. Add green chilli and coriander powder, mix and sauté well. Add chicken and mix.
  4. Add salt, crushed peppercorns, mix and cook till the chicken is fully done. Add coconut oil, mix and cook till dry.
  5. Add coriander leaves and mix. Remove from heat and set aside.
  6. Heat a non-stick tawa and grease with some coconut oil. Spread a ladleful of batter into a medium sized roundel, drizzle oil on the edges and let the underside cook. Spread a spoonful of the cooked chicken mixture on top, press lightly, flip and cook for 1 minute.
  7. Serve hot.
