Ingredients list for Pepper Chicken Uttappam
- 400 grams Boneless chicken cut into thin strips
- to taste Crushed black peppercorns
- as required Dosa Batter
- 1 tablespoon Oil
- ½ teaspoon Cumin seeds
- 7-8 Curry leaves
- 1 medium Onion finely chopped
- 1 tablespoon Garlic finely chopped
- 1 inch Ginger finely chopped
- 1 Green chilli finely chopped
- 1 teaspoon Coriander powder
- to taste Salt
- 1 teaspoon + for greasing Coconut oil
- 1 tablespoon Fresh coriander leaves chopped
Method
- Heat oil in a non-stick pan. Add cumin seeds and sauté for 30 seconds.
- Add curry leaves and sauté. Add onion, mix and sauté till it turns light brown. Add garlic, mix and sauté. Add ginger, mix and sauté for 1 minute.
- Add green chilli and coriander powder, mix and sauté well. Add chicken and mix.
- Add salt, crushed peppercorns, mix and cook till the chicken is fully done. Add coconut oil, mix and cook till dry.
- Add coriander leaves and mix. Remove from heat and set aside.
- Heat a non-stick tawa and grease with some coconut oil. Spread a ladleful of batter into a medium sized roundel, drizzle oil on the edges and let the underside cook. Spread a spoonful of the cooked chicken mixture on top, press lightly, flip and cook for 1 minute.
- Serve hot.
