By Sanjeev Kapoor 26 Oct 2020 in Recipes Veg New Update Palak Khichdi Main Ingredients Spinach puree, Cooked rice Cuisine Indian Course Main Course Vegetarian Prep Time 21-25 minutes Cook time 26-30 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients 1 cup fresh spinach puree 3 cups cooked rice 3 tablespoons butter 1 teaspoon cumin seeds 1 1/2 tablespoons finely chopped garlic 1 green chilli, finely chopped 1 large onion, finely chopped 2 medium tomatoes, finely chopped Salt to taste 1/4 teaspoon red chilli powder 2 teaspoons coriander powder 1/2 teaspoon garam masala powder 2 tablespoons fresh cream + for garnish Yogurt to serve Pickle to serve Method Heat 2 tbsps butter in a deep non-stick pan and let it melt. Add cumin seeds and sauté till the colour changes.Add garlic and green chillies, mix and sauté on medium heat till raw smell disappears. Add onion, mix and sauté on mSpedium heat till it turns golden brown. Add tomatoes and salt, mix well, cover and cook till the tomatoes turn pulpy. Add red chilli powder, coriander powder and garam masala powder and mix well. Add ¼ cup water andmix well. Add spinach puree and mix well. Add cooked rice and mix well. Cover and cook on medium heat for 2-3 minutes. Add cream and remaining butter and mix well.Switch the heat off.
