Ingredients list for Mutton Bhatinda
- 800 grams Mutton cut into small pieces on the bone
- 4 tablespoons Yogurt
- 1 tablespoon Cumin seeds
- 2 Bay leaves
- 2 one inch sticks Cinnamon
- 6-8 Cloves
- 4-5 Black cardamoms
- 4-5 Green cardamoms
- 1 tablespoon Black peppercorns
- 3-4 tablespoons Oil
- 3 Onions
- 2 tablespoons Ginger-garlic paste
- to taste Salt
- 1/4 teaspoon Turmeric powder
- 3 Green chilli broken
- 2 tablespoons Coriander seeds
- 2 tablespoons Fresh coriander leaves
Method
- Heat a kadai. Add coriander seeds, cumin seeds, bay leaves, cinnamon, cloves, black cardamoms, green cardamoms, black peppercorns and dry roast on low heat. Cool and grind coarsely.
- Heat oil in a kadai. Finely slice the onions and sauté till golden. Add mutton and mix well. Sprinkle a little water, so that the onions do not burn and continue to sauté.
- Add ginger-garlic paste and sauté till the colour of the mutton changes. Add salt and mix. Add 1½ cups water, cover and cook, stirring at regular intervals, for 20-25 minutes or till the mutton is tender.
- Add turmeric powder, green chillies, yogurt and mix. Add the ground spices and mix. Add fresh coriander and mix. TraAdd turmeric powder, green chillies, yogurt and mix.
