Mushroom Do Pyaza

In this mushroom dish onions are used in two ways – absolutely flavorful. Mushrooms are cooked with Indian spices and plenty of onions. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 1 cup quatered button mushrooms 
  • 1 medium onion, peeled and chopped
  • 1 medium onion peeled, cut into cubes and layers separated
  • 2 tablespoons oil
  • 1 green chilli,  slit + for garnish
  • 1 teaspoon ginger paste
  • 1 medium tomato, chopped
  • 1/2 cup fresh tomato puree
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon red chilli powder
  • 1/2 teaspoon garam masala powder
  • Salt to taste
  • 1 medium green capsicum, cut into 1 inch cubes
  • 1 tablespoon fresh cream
  • 1 tablespoon chopped fresh coriander leaves 
  • Fresh coriander sprigs for garnish
  • Laccha paratha to serve

Method

  1. Heat oil in a non-stick pan, add green chilli, ginger paste and mix well. Add chopped onion, mix and sauté till it turns golden brown.
  2. Add tomato, mix and sauté till pulpy. Add tomato puree, mix and sauté for a minute. Add turmeric powder, red chilli powder, garam masala powder and salt, mix well and sauté for 1 minute.
  3. Add ½ cup water and mix well. Cover and cook for 4-5 minutes. Add cubed onion, capsicum and mushrooms and mix well. Cover and cook for 4-5 minutes.
  4. Add fresh cream and coriander leaves and mix well. Cook for a few seconds and take the pan off the heat.
  5. Transfer into a serving bowl and garnish with coriander sprig and slit green chilli. Serve hot with laccha paranthe.
